What is the reason for the secretion of a lot of saliva while doing sports or jogging? Is it better to spit it out and why?

It's normal, when jogging/doing sports an activation of parasympathetic nervous system takes place which in turn will increase the secretion of saliva in your mouth. It's better to spit it out because it can choke you if it's accumulates a lot.

Because a body in motion is under a variety of stresses, more saliva or mucus will be produced and, therefore, will need to be expectorated.
-When running outside in cooler temperatures, your nose must warm and humidify the air you breathe before it reaches your lungs so that is by excessive saliva
-The body in itself produce more saliva when warm up .
-Joggers who smoke or who have recently quit smoking will produce more mucous as their lungs work to clean themselves during exertion.
-runners with even mild allergies might notice they are producing more saliva or mucus. Seasonal allergies can cause runners to wheeze and suffer from runny noses and watery eyes
-Some medications can cause increased saliva production, which might become exacerbated when jogging
